homemade mac n' cheese...

I’ve been craving macaroni n’ cheese for some time. I don’t really like the ones from the box. The orange powder scares me & it doesn’t have the right texture & taste. So, I looked at a few cookbooks & assessed my own version. Its quick n’ easy. All you need is: butter, milk, flour, pasta, shredded cheese, bread crumbs, parsley (optional), paprika (optional), salt & pepper.

1- boil pasta in salted water to al dente. Drain & let cool. If u want to make your own breadcrumbs, toast a few slices of bread now. let it cool hard & mash it up for later.
2- Melt butter in a big pan. Mix in flour. Whisk in milk. let it thicken. (Its like making béchamel, fancier term).
3- Mix in shredded cheese, but have a few for the end. I like a good mix of Monterey Jack & cheddar. But any cheese you like will be good. Mix it until it becomes a nice smooth cheese sauce.
4- Toss in the pasta. Mix well. Pour into a pan. Sprinkle the rest of the shredded cheese.
5- In a bowl, melt butter. Toss in the breadcrumbs. Give it a good coat. Spread it on the top of the pan of pasta. Get the broiler ready.
6- Sprinkle a little salt. Grind in some pepper. I like to give it some color so i like to add some paprika and fresh chopped parsley.
7- Place under the broiler. All you want is a nice brown top . So keep an eye on it, or it’ll burn quick.

When done, voila! Yummy golden creamy mac n’ cheese goodness. It was such a hit at my house, I made it a 2nd time within a week.

Next time. oh, and if u haven’t noticed, i don’t really have measurements for most of my cooking. my portions are always different. i kind of eyeball what i antipate it to taste like. and its always a little different each time. i think that is the reason why i suck at baking.
