just another day

i had to wake up really early this morning to make 2 calls internationally. its always confusing trying to figure out the numbers correctly. its wierd to hear the different ring tones. tg, for phone cards! anyway, took care of business for each call before the last-minute reminder came on by 7am (my time). whew!

dean & deluca’s caesar salad dressing
since i’ve been nursing a cold for the past few days, i still don’t have all my senses yet but i’ve been craving for salads. mainly a really good caesar salad. dean & deluca has a super simple dressing in their book. made a few quick adjustments. i used trader joe’s cheese & garlic croutons instead of making my own. their a bit on the large size, so i break them in half. i also used pre-shaved parmesan cheese. i really can’t go through a brick of that stuff. i also didn’t go into exact measurements, because 4 heads of romaine salad is too much food for me, so i just estimated to a smaller portion. only problem about not having all your senses is that you can’t taste as you go. i think i made it super insanely garlicky but i couldn’t really tell from my stuffed up nose and the hubby didn’t say anything.

mince garlic to form paste. whisk garlic paste, egg, lemon juice, and worchestershire sauce in a small bowl. add olive oil in a stream, whisking and whisk the dressing until it is emulsified.

in large bowl, combine lettuce, croutons and dressing until well coated. top with parmesan cheese.
