not to be greedy but i’ll take it! for me, it means lunch or dinner the next few days. i’ll heat it up or eat it cold, depends on what it is. but most of all i like to reinvent it into something else yummy. best take home choices are the fruits & roasted veggies (squash, corn, peppers, etc). as for the meat, i like the italian sausages & chicken breast.
last weekend at an in-law’s bbq, they like to triple the amount of food than the number of people eating. so, i took some of everything. though i didn’t have any during the bbq but i knew i wanted some chicken breast with no sauce on it for this cold salad.
sonoma chicken salad (adapted from whole foods cookbook)
2 cooked chicken breast cut into cubes
half cup of sliced celery
1 cup of seedless grapes
2 dollop of mayo
1 tablespoon of honey
1 teaspoon of cider vinegar
dash of pepper
mix the mayo, honey, cider vinegar together. mix in the chicken cubes, celery & grapes. mix mix. chill and eat.
other leftover faves: roasted corn, avocado & tomato salad w/ bbqed shrimp, italian sausage w/ swiss chard soup and roasted any veggie w/ pasta or couscous.
in other news: squirrels are evil. they like to dig up my garden & hang it dry for their fun pleasure.
