while watching the inaugural, i whipped up a batch of banana walnut chocolate chip muffins. i had to do something with those spotty semi-riped bananas. i also shouted at the hubs to use powdered cream for his coffee so that i could use what was left of the milk to complete the recipe. whew! i know i copied this recipe from somewhere online but i can’t remember who to reference it to. i made some slight adjustments to my own taste.
Banana Walnut Chocolate Chip Muffins
yield: 12 muffins
1 1/2 cups all purpose flour
2/3 cup brown sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup mashed ripe bananas (about 3 medium size)
1 large egg
1/2 cup unsalted butter, melted
1/4 cup milk
3/4 cup dark chocolate chips
1/4 cup of walnuts
Preheat oven to 350°F. Line twelve 1/3-cup muffin cups with foil muffin liners. Mix flour, sugar, baking powder and salt in large bowl. Mix mashed bananas, egg, melted butter and milk in medium bowl. Stir banana mixture into dry ingredients just until blended (do not overmix). Stir in chocolate chips. Divide batter among prepared muffin cups, filling each about 3/4 full. Bake muffins until tops are pale golden and tester inserted into center comes out with some melted chocolate attached but no crumbs, about 32 minutes. Transfer muffins to rack; cool.
after the morning excitement, i headed out to the burbs to determine my sofa choice. And since i was already at the mall, i stood in line to pick up some free cosmetics. the lines were short when i was there but it definitely got insanely long by late afternoon. you’d wonder where everyone was at in the empty department store until you come across the mob in cosmestics. its like flies on free shit, people!
