chilaquiles con salsa verde

prior to traveling to mexico, i always thought chips & salsa was a snack. who knew adding a sunnyside egg turns it into breakfast. while in mexico, i practically had this every morning w/ a side of beans & a cafe con leche. the other day, i bought a bag of chips @ my local mexican grocer. oh boy, its the most awesome chips i’ve ever had in a while, light & crispy. i made salsa w/ tomatoes. i made salsa w/ mangos & kiwi. i had chips w/ guacamole. so this morning, i’m using the last of it as seen above picture. i prefer fresh salsa but i had to use a can of salsa verde in the cupboard. i should take a rest from these chips before going out for another bag & making myself sick of it, eh?

in other news: i hate the in-between stages of a haircut.
